Mango sticky rice, riz Thaï à la mangue fraîche.

Unique difficulté : s’approvisionner en mangue de qualité. la meilleure saison avril à juillet.

La mangue jaune de Thaïlande ou Nam Dok Mai mango Nam est délicieuse à maturité.  Sa chair ferme et juteuse se marrie parfaitement au riz sucré auquel elle apporte son délicat parfum.

A Bordeaux, tu en trouves de superbes chez Eurasie.

_DSC5064Ingrédients pour 4 personnes

  • 400 gr de riz gluant
  • 2 tasses de lait de coco
  • 4 cuillères à soupe de crème de coco
  • 2 pincées de sel
  • 4 cuillères à soupe de sucre
  • 2 belles mangues fraiches
  • graines de sésame blond ou noir

La recette avec une cuisson du riz à l’autocuiseur

  • Mets le riz à tremper dans un bol d’eau froide. Remue, change l’eau  pour le débarrasser de son amidon. Laisse reposer au minimum une heure puis rince-le et égoutte.
  • Place le riz dans une mousseline au cuit vapeur, ajoute l’eau. Son niveau doit atteindre 1cm au dessus du riz. Place le couvercle.
  • Laisse cuire 15 minutes puis reposer 5 minutes appareil éteint.
  • Tu peux aussi faire de façon traditionnelle dans une casserole en suivant les mêmes indications.
  • Avec une grosse cuillère en bois, vide le riz encore chaud dans un plat creux.
  • Dans un autre bol, mélange le lait de coco, le sucre et le sel. Chauffe quelque seconde au micro-ondes et verse sur le riz encore tiède. Remue.

  • Laisse reposer une demi-heure à température ambiante. Le riz va absorber la sauce coco.
  • Au moment de servir, partage le riz en quatre portions.
  • Dresse sur une assiette à la forme souhaitée. Les thaïs sont fan de cœur. Tu peux essayer. Verse dessus une cuillère de crème de coco
  • Epluche la mangue, coupe la en quartier ou en fines tranches.
  • Dispose ½ fruit autour du riz.
  • Parsème le riz de sésame torréfié à la poêle.
  • En option, décore comme à Chiang Mai orchidées ou fleur comestibles selon tes possibilités.

  • 2 cup  coconut milk
  • 4 tablespoons coconut cream
  • 2 pinches  salt
  • 4 tablespoons sugar
  • 2 nice fresh mangoes
  • sesame seeds

 

Recipe when cooking the rice with a rice cooker:

  • Rince the sticky rice with cold water to get rid off excess starch. Soak the rice at least an hour.
  • Put water in the bol of your steamer  and cover the steam section with cheese cloth or muslin cloth. Pour the rice on the cheesecloth, cover with the lid and put it on the stove on medium to high heat. The sticky rice should take about a 20 minutes of steaming to cook and will become translucent when done.
  • In a bowl, mix the coconut milk, sugar, and salt. Heat in microwave for 2 minutes..
  • Take the sticky rice out of the steamer. Pour the hot coconut mixture on top of the rice and gently stir. Cover the bowl tightly with plastic wrap and let the mixture stand at room temperature, undisturbed, for half an hour.
  • To serve, divide the rice between 4 individual plates
  • Peel the mango skin away from the flesh and, using a sharp knife, cut the mango flesh into wedges.
  • Place a few mango wedges on the side,
  • Pour the coconut cream over the rice pudding then sprinkle with the sesame seeds.

Without a rice cooker

  • Put the rinced rice in a Small pan
  • Add water in order to cover the top of the rice by ½ inch
  • Cover the pot and cook the rice on medium heat
  • Bring to a boil then reduce the heat
  • Simmer gently for ten minutes without stiiring
  • Turn off the heat and leave the rice covered for five minutes
